Cook fresh garlic scapes like other vegetables. Their taste is similar to green beans or asparagus, but slightly sweeter.

Fresh garlic scapes can be steamed, baked or fried. When you can easily poke them with a knife, they are ready to eat. 

Add them to vegetable stir-fries, quiches, pizzas, tacos and more!

RAW: A GARLICKY ALTERNATIVE TO GREEN ONIONS

Raw fresh garlic scapes have a spicy, slightly garlicky taste.

Finely chopped, they will be a good substitute for green onions in your salads, soups, etc.

So you know the germ in a garlic clove? When the clove is planted in soil, the germ grows and forms a plant. In springtime, it will sprout 8 to 11 leaves. After the solstice, when days start getting shorter, the scape (the stalk that supports the flower) will appear between the leaves.

In June, the scape curves in on itself. During the summer, it straightens out. In late July, the bud opens into an umbel full of bulbils (which are like large seeds).

We harvest garlic scapes in mid-June, before they straighten out and open, when they are curled approximately twice around themselves. If we wait too long, the scapes will be tough and no longer edible! We harvest the garlic bulb from the same plant, about one month later.

People in Asia, the Mediterranean and Eastern Europe have been enjoying fresh garlic scapes for centuries. In recent years, they have become increasingly popular in Quebec. Be part of the trend!
